Recipes....
Salsa Chicken-my personal creation....
Homemade Salsa or out of the can (tomatoes are cheap at Kroger this week)
Chili Powder
Chicken breasts
olive oil
1-dust chicken with chili powder
2-Put about 1 tbs olive oil in pan and add chicken
3-When chicken is cooked through, top with salsa until salsa is warm
4-Serve with vegetable or over rice. It is also good with sour cream
I will be serving mine with corn (cheap at Publix..boil for about 10 minutes in salted and sugared about 1/4 cup sugar) and a salad
Shrimp in Lemon Butter Sauce
-Shrimp...on sale at Publix (4.99 lb)
-Stir together about 1 tsp butter(reduced calorie margarine) and 1 tsp lemon juice
-Saute
-Serve with brown rice, pasta, and a veggie
Oven Braised Pork
1/2 cup onion
1/2 cup orange juice (on sale at Publix-and Q)
2 tsp lemon juice
3 chopped garlic cloves (I used the one in the can...about 1 tsp = a clove)
1 bay leaf
1/2 tsp oregano
1/2 tsp cumin
1/2 tsp pepper
Pork-on sale at Publix cut into 1 inch cubes
Cilantro (left over from fresh salsa)
-Marinade-combine onion, orange and lemon juices, garlic, bay leaf, oregano, cumin and pepper in a gallon size sealable plastic bag. Refrigerate for 2 hours or overnight
-Preheat oven to 325 degrees. Spray baking dish with non stick cooking spray
-Transfer pork mixture to baking dish. Bake covered for 3 hours or until pork is tender. Discard bay leaf and serve. (to be honest..this is a recipe out of weight watchers...I will do this differently in order to be quicker. I would let the meat marinate and then saute it in a pan. I don't have 3 hours:)) I would serve this with squash...sauteed in low fat margarine with salt and pepper.
Hawaiian Pork
-Pork cut into 1 inch cubes
1/4 tsp salt
Fresh pepper
1 cup drained canned pineapple chunks (no sugar added)
3/4 c drained water chestnuts (I will be leaving this out based on how much they cost when I go to the grocery store:))
-Spray broiler pan rack with non stick cooking spray.
-Sprinkle pork with salt and pepper. Thread, alternating, pork, pineapple, and water chestnuts. Place skewers on prepared rack about 4 " from heat turning once for 8 minutes or until pork is cooked through.
Beef Tacos Supreme
1/2 lb ground beef (recipe called for 1 lb and 9 tortillas for 9 servings...so I just halved it because I don't have 9 people to feed:))
2/3 c water
1 tsp cumin
1 tbsp chili powder
1/4 tsp cayenne pepper
1 tsp onion powder
1 c canned black beans, rinsed and drained
4 whole wheat tortillas, warmed
1 c lettuce
1 large tomato, diced
1/2 avocado diced
-Brown the beef and drain fat.
-add water, cumin, chili powder, cayenne, and onion powder. Simmer for 5 min or until liquid is absorbed
-add beans and heat for 3 additional minutes
-fill each tortilla with 1/4 c meat and bean mixture, avocado, lettuce and tomato.
-Serving size is 1 tortilla..if you are like me and want to eat a ton! I would add some cheese also...because what is a taco without cheese??? This is from a diabetic cookbook.
Marinated Chicken and Teryaki Chicken (I like to get the Grillmates marinades and use them during the week. That way it is inexpensive...yummy...and you can serve them with any side that you like)..so there really isn't a recipe...just marinate and grill on the Foreman:)
--I have them with salad and potato salad on the side...see the menu

-Use whole wheat pasta..its better for you:) and you can't really tell the difference. You can buy the ready made prego sauces and add hamburger meat to it...or...you can use 2 cans of petite diced tomatoes and add various spices such as Italian seasoning...oregano...basil...etc. Whatever tickles your fancy.
So that's it. I know you may look at this list and think it is too hard to cook. But I guarantee you that I refuse to slave in the kitchen all night...unless I have people to impress! Think of ways to make it easier on yourself. Like marinating the chicken the night before..etc. Send me questions if you have them.

A Healthier Week
Ok, so this week I am going to be a tad bit healthier in what we buy. Not sure if coupons will help with healthy choices:(. My goal is to eat a lot more fruit and veggies and a lot less carbs. Although carbs are good for you...I am going to attempt to get them in the whole wheat form if we eat them. Now, for Andy and Micah, they will probably still get some of the white carbs...because they are boys...and apparently it doesn't matter how much you shove in...you never gain weight! So anyway, here is my menu for the week...in case you are interested in the recipes:) As for the coupons...this week might be a little off. I will keep you posted!

Deals...
Ok, so I think my plan for couponing will be to get the paper on Sundays...and then go shopping after MJ goes to sleep on Monday nights. That way I will have the time to look through coupons in the paper on Sunday while he is napping and get my stuff together for the next day. Couponing is so exciting! BTW--if you need diapers. Check the Kroger ad. There is a $3 off coupon for their Kroger diapers (southernsavers.com) and then they are on sale for $6.97 this week. So that's a pretty good deal for diapers...about $.11 a diaper. We usually buy Sam's diapers $40 for 176...which is around $.23 a piece. Check it out!

Ok, so my deals this week were great. I spent $52 for $98 shopping bill by using my coupons. WOOT WOOT! I still have a ways to go with this couponing thing, but I will still post my menus for the week. That way, if you like, you can go shop this week to create these meals.

Chicken and Dressing Recipe:
Chicken:
Flour, salt, and pepper mixture to coat chicken
Chicken strips
canola oil up to about 1/4 inch in skillet
-Heat oil in skillet
-Toss chicken in flour mixture
-Pan fry chicken until brown on all sides
-Remove chicken from pan
-Drain all but about 1 tbs of oil from pan. Add about 1/4 cup of flour mixture into pan. Stir until a rue is created. Add 2-3 cups of water or chicken stock.
-Allow to simmer to incorporate then add chicken back to gravy.
Dressing:
1 box of jiffy cornbread (feeds 4)
1 egg
1 small onion chopped
chicken stock
-Cook cornbread as directed on box.
-When cornbread is ready, scrape it into a bowl. Add onions, egg, salt and pepper. Add enough chicken stock that it becomes slightly soupy...a little less than an entire can. Placee in the oven at 350 degress for approximately 20 minutes or until it appears to be set and no longer soupy.
-Spoon chicken and gravy over dressing and serve with vegetables.

What's the Dealy Yo?
This blog is for couponers that need help creating their weekly menu. I have friends that enjoy couponing but would love to learn how to create meals based on those coupons. On this blog, I will post my weekly menu based on the deals I have gotten through couponing....Hope it helps!
